Martti Kuparinen has put together a collection of very nice bash installer scripts for Ubuntu Hardy as well as some excellent script documentation. Very very nicely done. You will want to be familiar with scripting and the terminal if you want to use these scipts. In addition he regularly improves them with updates. Included are scripts for installing an Ubuntu Workstation, an Ubuntu Server and scripts / and / or instructions on installing Vmware Workstation, Server and other interesting applications.
